Torreon 100% Iberico de Belotta Jamon (Pata Negra) , this label only given to 0.1% of pigs that can be called ‘pata negra’ or ‘black hoof’. Unlike the other Iberico ham, Pata Negra is 100 % Iberico native to the area.
Torreon 100 % Iberico de Bellota jamon cured for 42 months and it has unmatchable quality, flavour and texture. A distinct marbling and a creamy rim of ivory white fat glistens as it comes up to room temperature. The dark flesh is soft and tender from the pig’s stress free environment. At the end of the day, the aromas and flavours are what really wows is.
The Jamon is hand sliced, soft, sweet and salty. We say that you can tell you’re eating a true Pata Negra by the way the fat coats your throat as it melts down.
We simply define it as ‘one of the most amazing foods in the world’ due to its bouquet, aroma, texture, juiciness, and flavours. Based on bromatological analysis, an Iberico meats made from from an Iberian pig raised in the Dehesa pastures provides an excellent lipid panel, low in saturated fats, high in monosaturated fats, which is very different from that of an Iberian pig fattened on feedlots. Torreon breeds and raises their own pigs in the Dehesa pastures of holm and cork oaks, which provides a natural habitat for the authentic Iberian pig.
