Italian White Truffle, also known as the Alba White Truffle, is revered the world over as the ultimate in culinary indulgence and luxury. Found exclusively in Italy & Croatia they typically grow among oak, hazel, poplar, and beech trees. Their unique and celebrated aroma has captured the imagination of chefs all over the world and this truffle is considered the diamond of the kitchen.

They are best prepared grated minimally over pasta dishes or traditional Italian Cuisine. They are a white truffle with a marbled interior and are prized for their complex umami aromas that are unique unto themselves! When you think of truffles– this is it!

Harvest period: September/December. Italian white truffles can range in size. 

We recommend this product is consumed as soon as possible, within 5 -7 days. If stored properly they can have a longer shelf life, but aromatics decrease with time.

Use in the kitchen: sliver on raw meat, fondue, tagliatelle with butter, risotto, fried eggs, toma d'Alba.

How to preserve the Fresh Truffle

The preservation can take place in the refrigerator, for short periods or in the freezer for longer periods:

  1. In the refrigerator (between 2 ° and 6 °)- It can be wrapped individually in an absorbent paper or enclosed in an airtight food container. The container must be replaced, if necessary, every day. Small white molds may form around the truffle, resulting from normal perspiration and water loss; in this case, the truffle is not yet ruined. It can be defined as ruined when it begins to lose its consistency, to become soft and consequently to emit a bad smell. Storage Period : approx 7-10 days.
  2. In the freezer: Whole: after cleaning and drying the Fresh Black truffle, it can be frozen whole in a glass or plastic container for food use. In this case, it must still be used frozen. Storage period: About 5 Months.
