Black Summer Truffles aka Tuber aestivum are the most popular type of truffle used in Italian cuisine. Their incredible flavouring consists of garlic, wild mushroom and earthy hazelnut undertones, delicious when sliced and used as a garnish on a variety of dishes to enhance the flavour and give it a simply unforgettable, stand out touch.
There's nothing better than adding delicate, earthy flavors to the bounty of the season. These are not only prized for their delicate aroma and flavor, but also for being of great value—especially when compared with the more precious and scarce Black Winter Truffles
How to preserve the Fresh Truffle
The preservation can take place in the refrigerator, for short periods or in the freezer for longer periods:
- In the refrigerator (between 2 ° and 4 °)- It can be wrapped individually in an absorbent paper or enclosed in an airtight food container. The paper must be replaced, if necessary, every day. Small white molds may form around the truffle, resulting from normal perspiration and water loss; in this case, the truffle is not yet ruined. It can be defined as ruined when it begins to lose its consistency, to become soft and consequently to emit a bad smell. All fresh truffle is best to be consummed ASAP.
In the freezer: Whole: after cleaning and drying the Fresh Black truffle, it can be frozen whole in a glass or plastic container for food use. In this case, it must still be used frozen. Storage period: About 5 Months. Note: Taste and Structure might be affected due to freezing.
