Pluma Iberico is a rather special cut taken from the neck end of pork loin. In Spanish it translates the 'feather' cut - due in part to the wing-like shape. Our recommendation to Iberico Pluma is to make it as Char Siew or for first timers is always a simple season & sear with salt for 1-2 hours…perhaps with a touch of lemon or garlic. Cook it on the grill, in a pan, or sear it & then finish in the oven. Removing it from the heat at Medium Rare* will let its best flavor & tenderness shine. After that, let it rest, slice against the grain, and serve to the adulation of your family, guests, or own tastebuds. We like to serve it with Teriyaki Onion Sauce
Torreon 100% Iberico Bellota Jamon
Torreon 100 % Iberico de Bellota jamon cured for 42 months and it has unmatchable quality, flavour and texture. A distinct marbling and a creamy rim of ivory white fat glistens as it comes up to room temperature. The dark flesh is soft and tender from the pig’s stress free environment. At the end of the day, the aromas and flavours are what really wows is.
Creme de Bourgogne a la Truffe Cheese
Just in case the Triple cream cheese isn’t indulgent enough for you, we have this version with a layer of shaved truffle through the middle. The characteristic is light, creamy interior is complimented by the delicate perfume of black truffles – it is like eating whipped cream with truffles. The texture is smooth and soft – not runny, but definitely ‘melt-in-the-mouth’ territory.
Vacherin Mont d'Or
There’s no other word for it, Mont d’or cheese is unctuous, so much so, and here is a weird cheese fact – it’s one of only a few French cheeses you have to eat with a spoon!
Tartuflanghe DALBOSCO® Ground White Truffle
Freeze-dried and grounded White Truffle Powder use it as a finish for your dishes. Sprinkle it on pasta, pizza, salads, egg and potato recipes, meat or fish filets or as a spice to enrich your recipes or to create tasty sauces and condiments.
Like the opening credits for a film, antipasti announce the beginning of something special. Usually just the sight of a beautifully prepared antipasto is enough to change the entire mood of a gathering, luring each guest to the table for a shared meal among friends or family. Typical ingredients include sun-dried tomatoes, mushrooms, peppers, charcuterie, assorted cheeses.
